Vermouth is classified as a fortified, aromatized wine and can be found in sweet and dry varieties.  In choosing just one variety for a 10 bottle bar setup, I went with sweet since there are a number of well-known classic cocktails that call for it.  The one very notable drink that uses dry vermouth is the martini, though making dry martinis only requires drops or even misting of the glass, so a small 375ml bottle will suffice.

Vermouth typically isn’t very expensive but you will taste the difference in a Manhattan or Negroni if you go with cheap vermouth.  After trying several, my preference is Noilly Prat, which works well with a range of cocktails.  Also, vermouth should be stored in the fridge since, like wine, it doesn’t keep fresh if left at room temperature.
